Prawn Head Miso Soup えびの頭でお味噌汁
1. Wash the prawn heads and shells, then fry them with oil till they turn orange/ slightly brown.
2. Add water and simmer for 10 minutes.
3. Strain the stock with a sieve.
4. Transfer the stock back to a pot and add tofu or any ingredients you like; bring to boil. Turn off the heat and add miso paste. Garnish with sliced spring onions.
