Zaru Soba (Cold Soba Noodles) ざるそば

Zaru Soba (ざるそば), a staple dish for summer, is cold buckwheat noodles with soy sauce based dipping sauce called Mentsuyu (めんつゆ). Zaru means strainers in Japanese, meaning the noodles are served cold, not in soup.

Ingredients, soba noodles (buckwheat noodles), mentsuyu dipping sauce, soy sauce, mirin, water, dashi powder, spring onions, ginger, wasabi paste


Zaru Soba (Cold Soba Noodles) ざるそば


1. Prepare the Mentsuyu dipping sauce. You can buy Mentsuyu from Asian supermarkets, but you can make it yourself easily. Simply combined the ingredients listed above, mix well, boil, and let cool. Serve in a small cup.


2. Cook soba for 4 minutes or according to the package instructions.


3. Drain and rinse the soba in cold water to get rid of the excess starch. Highly recommend serving the soba noodles on a soba tray which strains the noodles, so that excess water won't dilute the dipping sauce.


4. Cut spring onions into slices and grate the ginger. Put these together with wasabi paste on a small dish.
