Teriyaki Salmon 鮭の照り焼き
*no need to marinate*
1. Combine soy sauce, sake, mirin, and sugar (2:2:2:1), and mix well.
2. Fry the salmon skin first, till golden brown.
3. Fry each side of the salmon till golden brown; then get rid of the excess oil.
4. Add teriyaki sauce from step 1; boil the sauce till it thickens.
Note: you can coat the salmon with flour before frying to make the salmon crispier on the outside, juicier inside.
