Chicken Meatball Soy Milk Hotpot 鶏だんごの豆乳鍋
(This recipe makes around 20 meatballs. Freeze half of them and stay tuned for another recipe for chicken meatballs!)
1. Cut vegetables of your choice into bite-size pieces. Highly recommend making carrots and daikon ribbons (using a peeler) as they cook quickly and absorb the flavours of the soup easily.
2. Combine all the ingredients for chicken meatballs and mix well. Roll the mixture into balls with your hands.
3. Simmer the meatballs in dashi.
4. Add the vegetables, soy milk, and soy sauce/ miso paste/ ground white sesame (depending on which flavour you prefer).
Serve with ponzu sauce for dipping.
