Miso Stir Fry with Aubergine & Pork Mince なすとひき肉のみそ炒め


1. Cut the aubergine into chunks. If you have time, you can soak them in salted water for 15-20 minutes, which helps to reduce oil absorption when frying.


2. Grate the ginger; combine miso, sake, and sugar and mix well.


3. Fry the skin of the aubergine chunks first, then each side till golden brown. (Add fresh chilli if you want to spice it up!)


4. Then add the pork mince and grated ginger. Once the pork is cooked, add the miso sauce, mix well, and cook for 2 minutes. Serve with rice.


This recipe serves two. If you’re cooking for one, you can save the other half for your bento!
