Ingredients, canned adzuki beans, water, sugar, salt
Steps to make Zenzai (Japanese Red Bean Soup with Mochi) ぜんざい

Zenzai (Japanese Red Bean Soup with Mochi) ぜんざい


1. Drain the canned adzuki beans.


2. Combine the adzuki beans and water and bring to boil. Remove the scum with a fine-mesh skimmer.


3. Add sugar and a pinch of salt to the mixture and stir well. simmer on a low heat for 15 minutes or until the beans mash easily. Stir the soup occasionally. Add water to adjust consistency if desired.


4. While the soup is simmering, toast the mochi in an oven till puffed and browned. This should take around 5 minutes.


To serve, simply put the toasted mochi in the bowl and pour red bean soup around it.


This recipe serves two using one can of adzuki beans.
