Tofu Prawn Cakes 豆腐と海老のふわふわ揚げ
*without a food processor & a deep fryer*
1. Dice half of the prawns and mince half of the rest by chopping them finely and repeatedly till it forms a paste.
2. Combine all the ingredients and mix well. Remember to beat the eggs before adding it to the mixture.
3. Use two spoons to shape the cakes & add them straight to the pan with hot oil.
4. Fry both sides of the cakes till golden brown.
✨ This dish is also great for bento (lunchbox). Store them in the fridge for up to 2-3 days or up to a month in the freezer.
✨ Halve everything if you are making this dish for one meal.
✨ You can add edamame or sweet corn to the mixture too.
