Oyster mushroom & fried tofu miso soup
ひらたけと油揚げの味噌汁
1. Cut the deep fried tofu into small pieces.
2. Boil 400ml of dashi OR water & dashi powder.
3. Once boiled, add the mushrooms and the deep fried tofu pieces and cook till the mushrooms are soft.
4. Turn off the heat and stir in miso paste. Garnish with sliced spring onions.
Oyster mushrooms can be replaced by other mushrooms (see slide 4) or dried shiitake mushrooms.
